Postharvest treatments and their effects on fruit and vegetable antioxidantsPostharvest treatments have developed mainly to preserve freshness and to avoid microbialgrowth (Yahia et al., 2009), however, it has been shown that as a secondary response, some ofthese treatments affect the metabolic activity of the treated produce, such as triggering thebiosynthesis of antioxidant compounds (Gonzalez-Aguilar, et al., 2010) (Fig. 1). In the nextparagraphs we will discuss the effect of some postharvest treatments on the antioxidant contentand stability of fresh fruits and vegetables.
