On a cutting board, layout sheeted spring roll wrappers.
Place a tablespoon full of peppered roast chicken slices along the wrappers & a stick of string cheese.
Add sliced onions, red capsicums, pineapples & coriander over the chicken mix.
Roll the spring roll wrapper with the mix tightly. Use water if needed to seal the sides.
Par fry the spring roll at 190°C for 1-2 minutes (just to set the spring roll skin).
Freeze.
To prepare: heat in oven or microwave until cheese is fully melted inside.
