2.5.1. Freezing curve of litchi fruit
A thermometer with a time and temperature self-recording
function was used to detect temperature alterations in litchi fruits
with one probe in the center of the fruit and one probe in the
coolant. Measurements were taken every 10 s until the fruit tem-
perature reached 18
C.
2.5.2. Freezing rate of litchi fruit
The radius of the litchi fruit was measured using a Vernier
caliper. Freezing time was defined as the duration of fruit temper-
ature reduction from 0
C to the level which is 10
C lower than the
freezing point of the litchi fruit.
