The lightness (L∗) of the three samples had an stable behaviour, because they presented a variation lower than 3.5% after 17 weeks of storage ( Fig. 1). Other anthocyanin rich juices (at pH 4.5) have showed similarL∗ losses after 17 weeks at 20 °C ( Hernández-Herrero & Frutos, 2011).
