Guidance on Determining Remote and Probable Risk

This following table shows examples of the criteria used to determine cross contamination risks from allergens. The Food Standards Agency Guidance on Allergen Management and Consumer Information suggests the use of a risk assessment based on Probable and Remote risks and this approach has therefore followed the same principles.
