There will be a good bit of fond left on the bottom of the pan. I like to add some butter and caramelize onions in the pan. Scrape the bottom of the pan, and the fond and flavors of the meat will stick to the onions. Mushrooms will also work here.
A buttered bun will have a layer of oil, preventing it from going soggy when it meets the burger. Mayonnaise will also work. If I’m going to butter my buns, I’m only a couple of steps from having garlic bread buns
