These results could be due to the mutual degradation of anthocyanins and ascorbic acid in the presence of oxygen. There are three main hypothesis for the mechanisms involved in this degradation. The condensation of the two molecules (Garzón and Wrolstad, 2002, Jurd, 1972 and Poei-Langston and Wrolstad, 1981), the degradation of the anthocyanin preventing the oxidation of ascorbic acid (García-Viguera and Bridle, 1999 and Pang et al., 2001)
