A monetary loss assessment (cost in €) was performed for the total food waste generated at both stages. The total cost of the commodities bought was obtained by multiplying the average commodity price (€/kg) by the total plate waste weight (kg). The average commodity price was obtained using the meal price for students, €2.50 per meal, divided by the average meal weight. Meal weight included the main dish average weight calculated plus 50% of the wasted soup weight, since 50% is considered to be water.
